Okra Bhujiya with Pyaz (Onion) that serves 4 people:

Ingredients:

500 grams okra (bhindi)

1 large onion (pyaz)

1 tsp turmeric powder (haldi)

1 tsp red chili powder (lal mirch)

Salt to taste

3 tbsp oil

1 tbsp ginger garlic paste

INSTRUCTION

1. Rinse the okra in cold water and pat them dry with a paper towel. Cut off both ends of the okra and slice them into thin rounds.

2. Slice the onion and set it aside.

3. Heat the oil in a pan over medium heat. Once the oil is hot, add the okra/bhindi  and sauté for 5 minutes or until they are fully cooked, then set aside

4. Now add oil in the same casserole then add the slice onions and sauté until they turn golden brown in color.

5. Now add ginger garlic paste.

6. Add the turmeric powder, red chili powder, and salt to taste. Mix well and continue to cook for 1-2 minutes.

7. Add the sliced okra to the pan and stir well. Let it cook for 2-3 minutes.

8. Turn off the heat and serve hot with roti or paratha.
